Originally the Nightlinger Café in Manter, Kansas, Uncle Ed’s was purchased by the Herron family shortly after the tragic passing of Chad’s uncle, Edward “Ed” Lynn Bezona of Manter.
What began as a small-town café has since transformed into a mobile tribute, carrying forward the memory of Uncle Ed through food, friendship, and community.
Today, Uncle Ed’s continues to build on a legacy of great food, great times, and great memories across southwest Kansas, bringing a taste of home wherever they go.

Big C’s Café was originally named in honor of the Wadlington family's grandson, the “Big C” in their lives. But as the café grew, the name quickly took on a second meaning around town. Regulars began associating it with its owners Chad and Brenda Herron the family behind the grill and the family behind the business. Known by many as the real Big C. Whether it was the name, the burger, or the big personality behind it all, one thing was certain: Big C’s became a name everyone remembered.

From the burger and baked potato bar experiments to family-filled Friday nights, this place has hosted nearly every family graduation, birthday, and celebration you can think of. For so many, Big C’s isn’t just a restaurant... It’s a scrapbook of memories.

Big C’s Café has always been more than just a restaurant it’s a piece of Elkhart’s heart. Built from the ground up by the Wadlington and Herron families, the café quickly became known for its welcoming spirit, home-cooked meals, and deep ties to the community. With special thanks to Brenda’s signature dishes and the legendary Big C’s Burger said to have been created by Big C himself, Chad Herron the café became a beloved gathering place for locals, travelers, and everyone in between. The Herron's poured their hearts into the business for over a decade, raising their family here and showing unwavering support to local schools,
4-H, and countless community events.
In 2020, the torch was passed to new ownership with the same commitment to honoring that legacy. Today, Big C’s Café remains both the first and last stop on Highway 56 in Kansas, serving up hearty meals, warm smiles, and a whole lot of hometown pride.

Back in the day, after the kitchen closed, the real memories were made, hanging out with friends, scrubbing fryers, and sneaking sodas or ice cream out the window. For those who worked here, it wasn’t just a job, it was a part of growing up.

Family reunions, graduation dinners, birthday breakfasts—Big C’s has seen it all. Over the years, the café has become the backdrop for milestone moments in so many families’ lives, including our own.

From Kristina’s grandpa, to her parents, to the next line of helpers and dreamers Big C’s has been carried forward by family hands and community hearts. Everyone pitched in, whether they were on the payroll or not.

It’s the place where the old-timers came to swap stories and catch up on town news, one bottomless cup of coffee at a time. A spot to feel at home, whether you were working the grill, stopping in for a sandwich, or just enjoying the morning crowd.

🥪 Started with Sandwiches, Built with Love
Long before it became the Big C’s you know today, it began with simple sandwich orders filled out by hand. Favorites like hot beef & cheddar and hot ham & Swiss kept folks coming back and laid the groundwork for everything we’ve built since.
🧰 Grandpa’s Hands Built It
Big C’s was literally built by hand, by a stubborn grandpa Jerry who didn’t want any help. His pride and grit still echo through these walls, even if it caused a few challenges along the way.
